A root cellar works because it offers cool, stable temperatures, darkness, and steady humidity, conditions that let vegetables and preserves last far longer than they would sitting out in a warm kitchen. Most apartments and small houses do not have anything close to a true cellar, but the underlying idea, finding the coolest and most stable spots in a home and using them deliberately, still holds up even without one.

A cabinet with a solid door does more work here than an open shelf, even if the two are the same temperature. If storage space is limited to open shelving, something as simple as a cloth draped over jars can stand in for a proper dark cabinet.
Separating what wants to be together and what does not
Some produce releases gases as it ripens that cause nearby items to ripen and spoil faster. Onions and potatoes in particular do not do well stored right next to each other, since one tends to speed up sprouting in the other. Keeping these kinds of pairings apart, even within a small space, extends how long everything lasts, and it costs nothing beyond a little attention to what is sitting next to what.
A root cellar is really just a set of conditions. Once you know what those conditions are, you start noticing where your own home already provides them.
Airflow in a small space
A traditional cellar has some air movement even while staying cool, which keeps humidity from building up in a way that causes mold. In a closet or cabinet, this can mean not packing storage completely full, leaving small gaps between containers, and occasionally opening the door to let air exchange happen rather than sealing everything in an airtight, undisturbed space for months at a time.

Picking one item, a bag of onions or a few jars of something home canned, and finding its best spot in the house is enough to start. The rest tends to follow naturally once the habit of noticing temperature and light becomes part of how you put things away.
What does not belong in this kind of storage
Not everything benefits from a cool, dark spot, and it is worth being clear about that too. Tomatoes, for instance, tend to lose flavor and texture in cold storage and are usually better kept at room temperature until fully ripe. Bread stales faster in a refrigerator than it does in a cabinet at room temperature, even though refrigeration feels like the safer choice. Part of adopting this kind of thinking is learning the exceptions along with the rule, rather than assuming cooler and darker is automatically better for every single item in the kitchen.

Temperature and darkness tend to get the most attention, but humidity is just as important for certain items and is the easiest factor to overlook in a small home. Potatoes and root vegetables like a bit of humidity to keep from shriveling, while onions and garlic actually prefer things on the drier side and will soften or sprout faster in a damp spot. A simple way to manage this without any special equipment is to store humidity loving vegetables in a perforated bag or a container with some ventilation, which holds a little moisture in without trapping so much that mold becomes a problem.
Small adjustments, made consistently, do more for how long food lasts than any single clever storage trick.
Working with what a small kitchen already has
Many small kitchens already contain a version of every zone a root cellar provides, even if none of them were designed with that purpose in mind. A cabinet farthest from the stove is usually the coolest one in the kitchen. A drawer near an exterior wall is often a few degrees cooler than one in the center of the room. None of this requires new furniture or a renovation, just a shift in how existing space gets used. Once you know what conditions a given food actually wants, the work becomes mostly about matching what you already have to what the food needs, rather than searching for a perfect dedicated space that may not exist in a smaller home.
A practice that grows slowly
This is not something to get right immediately, and there is no need to treat the first attempt as final. A jar of onions that sprouts too quickly, or potatoes that soften faster than expected, are useful information rather than failures. Adjusting from there, moving a container to a different shelf, spacing things out a little more, is how this kind of storage knowledge actually builds over time in a real, lived-in kitchen rather than an ideal one.
